3. Basic cooking methods
4. Prepare & cook stocks and soups
5. Prepare & cook mother hot sauces
6. Prepare cold appetizers and salads
7. Prepare and cook fruits, vegetables and pulses
8. Prepare and cook meat and offal
9. Prepare and cook poultry
10. Prepare and cook fish and shellfish
11. Prepare and cook rice, pasta, grains and egg dishes
12. International cuisines
13. Basic cakes
14. Produce hot and cold desserts and puddings
15. Bakery products

Tests, exams and compilation of a portfolio of evidence. Supervised 4 weeks’ internship in a restaurant or hotel kitchen. On successful completion of the above, free work placement service.
